Re-racking
Introduction
Once you’ve finished monitoring and determined it’s time to re-rack, you’re ready for the next step of my my standard recipe. During this step you’ll move the cider from one fermentation vessel to another, usually a glass carboy.

Equipment
- Sanitizer
- Bucket or spray bottles for sanitizer
- Siphon
- Airlock
- Carboy
- Hydrometer
- PH Tests
Process
- Wash and sanitize all equipment
- Measure the original gravity of the batch
- If adding sugar, honey, or maple syrup measure both before and after
- Measure PH
- Prepare the siphon (or auto-siphon)
- Siphon from the fermentation vessel to the secondary vessel
- (Optional) Add any additional ingredients to the carboy
- Put airlock on the carboy
- Store fermentation vessel somewhere cool (~60F) and dark.
- Record date, measurements, and other information
Next Step
Once you’re done re-racking, it’s time monitoring again to wait until it’s ready to bottle.
