Re-racking

Introduction

Once you’ve finished monitoring and determined it’s time to re-rack, you’re ready for the next step of my my standard recipe. During this step you’ll move the cider from one fermentation vessel to another, usually a glass carboy.

Ingredients

Equipment

  • Sanitizer
  • Bucket or spray bottles for sanitizer
  • Siphon
  • Airlock
  • Carboy
  • Hydrometer
  • PH Tests

Process

  1. Wash and sanitize all equipment
  2. Measure the original gravity of the batch
    • If adding sugar, honey, or maple syrup measure both before and after
  3. Measure PH
  4. Prepare the siphon (or auto-siphon)
  5. Siphon from the fermentation vessel to the secondary vessel
  6. (Optional) Add any additional ingredients to the carboy
  7. Put airlock on the carboy
  8. Store fermentation vessel somewhere cool (~60F) and dark.
  9. Record date, measurements, and other information

Next Step

Once you’re done re-racking, it’s time monitoring again to wait until it’s ready to bottle.
